A Delicious Dinner in Under 20 Minutes

When I was little and it was 5 degrees outside, but felt more like 10 below nothing tasted better than my mom's grilled cheese and soup. Now that I've gotten older, I've developed my own 'twist' to the average grilled cheese which I can do in about 20 minutes, and with the demands of our busy lives, 20 minutes is sometimes all we've got.

I suggest getting everything out for all three recipes in the beginning so you do not have to go and hunt around.

Soul Soup
Prep time: 5 minutes
Cook time: 15 minutes (varies depending on your stove and temperatures used)
Servings: Varies depending on how much you serve. Plenty for you and a friend to share and have leftovers for to warm you up later.

Ingredients

* 3 cans of chicken broth (42 ounces total)
* 2 cups water
* 2 cans stewed tomatoes (30 ounces total)
* 1 onion (Vidalia works best)
* 2 celery stalks - Chopped up
* 8 ounces of your favorite thick pasta, fettuccine or linguine are my preferences

Directions
Chop up onion and celery before starting. Fill a large pot will all above ingredients. Bring the pot to a boil while stirring occasionally. Watch the celery and check to see that it's getting tender. When it's to a boil, lower the heat (medium low) and allow it to simmer. Add the pasta and cook for the length of time directed on the package. Add any salt, pepper or other seasonings to bring it to your liking.

Once you've got it started, go ahead and move on to getting your sandwich started. The sandwich will take about 15 minutes total (prep and cook time) so you'll want to start and move quickly during prep.

ok
i might make some of these one day
Nutritional information is hard for things like this because
different brands can equal different amounts. I wanted to include
it but I felt it could be incredibly misleading depending on what
people buy. Like the chocolate milk - - tallied up I came up with
three different sets of numbers for nutritional information based
on brands I had in the house.
Great article!! I love finding new recipes, especially ones that
use common ingredients and are simple and quick to make. The soup
looks delicious, I am definitely going to give it a try.
these look so great bc some of us care about the nutritional info
" why on earth do you need butter AND olive oil?"

Because olive oil doesn't keep it from sticking in my pan, but
butter does. But the the olive oil browns it better. And I don't
use cooking spray unless I have to because I can taste it.
If I could cook, I might attempt these!! great article, susan :)

these sound really good. i hate peppers so i'd probably switch
with zucchini or something. maybe i'll hang onto this for when i
move out of the house this summer.
Finally something on kiwi that isn't about fashion or some other
annoying trend! These recipees look great! I think I'm going to
try the grilled cheese soon. I love vegis but I never even thought
of adding them to my grilled cheese! That's so kool. Thanks for
the ideas Susan! And btw you did really well explaining the steps,
in my opinion.
I think I'll print off the homemade hot cocoa... I'm a hot cocoa
fiend actually... Why didn't you tell me you had an awesome recipe
for hot cocoa Susan? I have hot cocoa almost every day!!!! LOL
if i wasn't so dang picky, i'd make this ;o)
