It's Chicken for Dinner

3 Simple Recipes, 1 Delicious Meal

It happens to everyone: Money is stretched and adding one more trip to the store isn't in the plans. I thought I'd put together, and share some awesome meals with minimal ingredients (usually ones I have around the house already) that take minimal effort. Usually I cook in themes. A lot of times it's Mexican or Italian night. Other times it's chicken or leftover night. Either way it's a great way to make one trip to the store, and make ingredients last all week long!

Chicken is the most versatile because it can be spiced up anyway you need. So lets start with Chicken night!


Appetizer: Chicken 'n Stuffing Muffins

This one is especially yummy if you're looking for something that reminds you of "home-style" with a twist.

Prep Time: 5 minutes
Cook Time: 25 minutes

Stuffing mix is just a premade version to save time from making
the following.

A generic recipe would be:

1/4 cup butter or margarine
3/4 cup chopped celery
1 medium onion, chopped
6 cups unseasoned stuffing croutons or dry bread cubes
2 1/2 cups chicken broth

Saute the butter, onion and celery. Pour in a bowl, add croutons,
pour in enough broth to make them moist, not soggy. Add salt and
pepper to your taste. Put in a baking dish for 30 minutes covered
at 350F and then 10 minute uncovered to let it get brown and
crunchy.
Stuffing mix? What is that? I think that is something I cannot
find in my country. It would be nice to tell what that mix is so
that rest of the world could understand your recipe.
