Baked Eggs and Potatoes
Serves 4

3 Tbsp. butter, unsalted
1 1/2 pounds potatoes, red-skinned
1/4 cup parsley leaves, fresh
2 garlic cloves
1 tsp. salt
Pepper
8 eggs, large
1 cup cheddar, extra-sharp and shredded

Start by dicing your potatoes, chopping your parsley and mincing your garlic cloves. Then preheat your oven to about 400 degrees. Over medium heat, place the potatoes and butter in a sauce pan and let them cook until the potatoes turn a golden brown. This will take roughly fifteen minutes. Add in your salt, pepper, garlic and parsley and stir until the potatoes are well-coated. Reduce the heat and turn to the eggs. In another pan, cook the eggs over a medium-heat sunny -side up until the egg whites look firm. This will take 10 minutes or so. Add in the cheese on top of the eggs. Cook until it melts. Then serve.
