LOS ALAMITOS, Calif. October 2012-After 16 years of successful business in Anaheim, Blake's Place has recently opened its second location here. Owner Gene Hobel and Mike Rhodes, his partner at Los Alamitos, had been thinking of opening a new store and different areas were considered. "When we saw this place (formerly a fast food chicken vendor) was open, we jumped on it," Hobel says.

For those micro-brew die-hards, Shipwrecked doesn't disappoint. For Rich, the brew-master, it's all about the beer. Offerings such as the Bayside Blonde will appeal to those who prefer a lighter body and mouth-feel. While the Peninsula Porter, with its' notes of coffee and roasted barley will ensnare those who crave a more hearty brew. The Cherry Wheat is made with locally grown Door Co. cherries for those who are interested in local flavor. The current seasonal offering, Pumpkin Patch is a favorite of the locals due to its' notes of cinnamon and nutmeg. The menu boasts that it "warms the spirits at any time"; how true.

If you arrive for lunch at Oklahoma Joe's, don't be surprised if the line of people extends out the door! This is the price for good food, but don't worry - the line moves fairly efficiently and soon you'll be sitting down to satisfy the hunger that has been building since you started smelling the food in the parking lot. Their specialty is pulled beef brisket pork, but their brisket is also excellent and is my wife's and my favorite. It is melt-in-your mouth tender and served with a sauce that has just the right amount of tomato and spices for us. If you have more adventurous palates, they also have their "Night of the Living BBQ" sauce, with smoky chipotle peppers!

Depending on the amount of meat you have sliced, you can use different seasonings and experiment with different flavors. Place the desired amount of meat into a bowl. Season with your choice of spices or liquids and mix thoroughly to make sure all of the meat is coated. Place the seasoned meat back into the zip lock bags or plastic containers, and place in the refrigerator. The length of time you choose to marinate your meat is also completely up to you. I have taken meat straight from being sliced, unseasoned, and put it directly on my dehydrator, and I like it just as much as seasoned jerky.

Did you know that at one time, brisket was considered a very poor quality meat? History has it, that two brothers from Germany, back in the 1950's decided to smoke up some leftover roast beef brisket they had. They left the brisket inside their smokehouse for an entire weekend. When they returned to work they sliced up the meat and served it to their customers. The meat was so flavorful and tender that it quickly became a hit.

Double IPAs need something a bit more substantive for their pairings. You'll find that they go well with country-fried steak and mashed potatoes, as well as with smoked roast beef brisket. They also pair very well with super sweet desserts, like caramel cheesecake.

The best way to cook brisket is through smoking and the best way slow cooker beef recipes do this is through electric smokers. It may take some trial and error in the beginning as you perfect the art of smoking but once you do, you will enjoy perfectly smoked meat every time.
